Penne With Scallops and tomato.

1 pound Scallops
1 pound Penne pasta
8 Tomatoes
2 tin Italian tomatoes
1 tablespoon chopped Garlic
1 teaspoon Salt
2 tablespoon parsley
1/3 cup Olive oil
1/4 teaspoon chilli pepper
1 teaspoon Lemon rind - grated
1/2 cup basil leaves
4 tablespoon Grated Parmesan cheese

Add tomatoes, into boiling water to loosen skins and peel. Remove seeds and chop.

Cut scallops into thin slices and place in bowl with lemon rind. Sauté garlic in oil until pale golden and add the tomatoes, salt and hot pepper flakes. Simmer for 5 minutes. Boil a large pot of water, add salt and pasta. Cook for 10 minutes, until nearly done. Drain and add to sauce. Add basil, chopped parsley and scallops.

Remove from the heat and let it stand 4 minutes to cook scallops.
Add Parmesan cheese and serve.
