Italian Focaccia.

8 oz potatoes
1 1/4 tablespoon dried yeast
3 3/4 cup flour
1 1/2 cup warm water
2 tablespoon salt
3 tablespoon olive oil
1 large tomato, chopped
2 tablespoon capers, rinsed
1/2 tablespoon salt
1/2 tablespoon oregano
1/4 cup black olives

Peel the boil the potatoes, drain and the mash. The potatoes should be used while they are warm.

Preheat the oven to 400F. Sprinkle with olive oil and spread with tomatoes, capers, salt, black olives and oregano. Bake for 25 to 30 minutes until golden brown.
