Golden Italian Trout.
4 Trout washed and filleted. 200 gr each
80 gr butter
Prezzemolo
Lemon juice (1 lemon)
Grated lemon rind (½ lemon)
1 tablespoon capers
Flour
Salt and pepper.
Wash and fillet the trout. Roll trout lightly in flour. In a large frying pan melt 30 grams of butter. Add trout and cook on both sides till golden brown. When cooked remove trout to a heated serving dish. In a small pan melt the remaining butter; add lemon juice, rind, chopped prezzemolo and capers. Stir well. When cooked pour over the trout and serve. Season to taste.
